Air-dried ginger is made by cleaning ginger roots and drying them in the open air until they lose moisture. This process concentrates the flavor, making it spicy and slightly sweet. Air-dried ginger retains its flavor well and can be stored without refrigeration for extended periods. It’s commonly used in cooking and can be rehydrated before use.
