Cassava Tostones Costa Rica (Tierra Buena)

To make delicious cassava tostones, start by peeling and cutting two large cassava roots into thick slices, about 1-2 inches. Boil the slices in salted water for 15-20 minutes until tender but not mushy. Once cooked, drain and let them cool slightly, then flatten each piece to about ½ inch thick using a flat surface. Heat oil in a frying pan over medium heat and fry the flattened cassava slices in batches until golden brown and crispy, about 3-4 minutes per side. After frying, drain on paper towels and sprinkle with salt and any optional seasonings, such as garlic powder or lime juice.
